Heat 1/2 cup of honey in a small saucepan over medium heat. Once the honey starts to simmer and foam reduce to low. Let the honey cook over low heat, stirring constantly for another two to three minutes, or until the honey reaches 300 degrees or deep golden brown. Remove from heat and add 1/3 cup of water and stir to combine. Add a 1 inch knob of sliced fresh ginger, the peel of one medium orange, 1 tbsp. crushed cardamom pods, 1 star anise pod, 1 tbsp. allspice berries, 1 tsp. of ground cinnamon, 1 tbsp. whole pink peppercorn, 1/2 tsp. ground nutmeg, and 1 tsp. sea salt. Stir ingredients and return to cook over low heat until flavors are incorporated, five to 10 minutes. Let cool completely and fine strain into a jar or dispenser of choice.
