My dirty rice is similar to my grandfather’s oyster dressing. I don’t use a recipe because my hands know what they are doing. I use ground meat, but no ground pork — and I add chicken gizzards, which I think is really what gives it that “dirty” flavor. Since my dad and I are the only ones that like oysters, I don’t add them or their oyster juice to the main pot. Instead, I make a separate pot just for us. I use a lot of oysters because I want to really taste them. Recently, I made a version with cauliflower rice. It was pretty good! But don’t precook the cauliflower — it will cook enough right in the pot. – Donny Rouse, CEO, 3rd Generation
