They said, ‘Yeah, we would make some, but we need about 40 gallons of mirliton juice,’” laughs Hill. “But then I talked to a woman who said that her husband used to make [mirliton wine] out in Metairie. Well, then I finally found a recipe for it. It was innovation.” When it comes to an unfamiliar piece of produce, the inspiration is there to start experimenting if your ideas are bold enough. And mirliton is there, waiting with bated breath, for you to show it a little bit of innovation.
