M aking jambalaya for a tailgate or any large gathering is not as easy as just doubling or tripling your recipe. You have to take into account a variety of things, including the size of your pot (as the pot gets bigger, the ratio of liquid to rice gets smaller). Jay Grush — with help from his friends on the Food and Drink board on tigerdroppings.com, which includes a Gonzales jambalaya expert — developed an
interactive jambalaya calculator that shows you how to adjust your recipe according to particular criteria, including the size of the pot, number of servings, amount of rice and amount of meat. There’s even a pastalaya tab if you’re using pasta instead of rice. It’s available for Android on the Google Play Store. You can also download a free Excel spreadsheet at jambalayacalculator.com.
