O ctober is here and we are all looking forward to cooler temperatures. Warm weather is not going to dampen our enthusiasm for the Saints; but let's face it, Halloween costumes and football parties are a whole lot more fun when the temperature drops. In this issue of Adore , we spotlight Emeril's Restaurants and their talented Pasta Lady, Dana Gaudé. Having tried my own hand at pasta making when I was in Italy last spring, I was keen to suss out fresh pasta dishes in New Orleans. Happily, I can report that all four Emeril's Restaurants feature delicious, homemade pasta. When Emeril Lagasse opened his first restaurant in 1990, the Times-Picayune food critic wrote that "the thrills never seem to end in this most exciting restaurant to appear on the local scene in memory. Long live the spirit of Creole creativity. And long live Emeril's." Here we are almost 30 years later and that innovative spirit is as strong as ever. I've been to each of the distinctive Emeril's restaurants in recent months—Emeril's with guests in town, Nola after the theatre, Delmonico for a cousin's milestone birthday, and Meril for a friend's son's college sendoff. W hen KiKi and Mike Nixon bought their home in 2000, they could see great potential in both the neighborhood, Treme, and the old Victorian house. Although the house, built in 1905, had been converted along the way into four apartments, glimpses of its original elegance enticed the couple to embark on an extensive renovation, one that restored the residence back to a single family home. They added a Easy Elegance

beautiful pool to the large backyard and an artist's studio for KiKi. The home now functions in the sophisticated yet relaxed way that suits the Nixons perfectly. Once the structural work was completed, KiKi was ready to furnish and decorate the house. As someone who loves design and many styles, she looked to Shaun Smith and Betsey Nixon Hazard of Shaun Smith Home to "reign it

in," as they fondly call it. The firm's aesthetic is collected and tailored with modern elements living seamlessly with antiques. It was exactly what the Nixons wanted. With seven grandchildren and a love of entertaining, everything had to be as comfortable and useful as it was pretty and chic. As Shaun explains, "KiKi is a great friend as well as a client, so she trusted me completely. It was so much fun! She didn't even want a design presentation. We actually kicked them out of the house for several days while we installed everything. She had no idea what she was walking into, but she was absolutely thrilled." The entire interior received a fresh coat of Benjamin Moore's Decorators White: satin finish for the walls and semi-gloss for all trim. "It's one of our go-to whites for when a space gets abundant natural light. Art looks great on it," explains Betsey. For drapery, they used a Kravet linen and wool fabric that falls beautifully from simple rings. The original floors, narrow oak planks in the front of the abode's more "formal areas" and wide pine boards

for the back of the house, were all given the same soft caramel finish. This clean and sparkling backdrop, one of the design firm's signatures, is perfect for a stylish array of eclectic furniture, lighting, and art. The end result is a masterful mix of honey hues, gold leaf, warm wood, and yummy textiles. A spectacular chandelier that KiKi found at ABC Carpet and Home in New York is drop dead gorgeous in the dining room. With sunshine pouring in, Shaun continued the bright and open look with a 1960s lucite and glass dining table, ebony lacquered chairs found at an estate sale, and an antique mirror from his Magazine Street shop. For accessories, Shaun prefers to go bold, hence the statement- making wall hanging — a painted panel he found at Wirthmore Antiques — and a fun bust of Beethoven that he scored at a junk shop. A vintage slipper chair covered in Schumacher's granny-chic Pyne Hollyhock fabric plays nice with the modern shiny white console from Malachite Home. The adjacent sitting room is KiKi's favorite spot for

reading and lounging after dinner. Anchored by an 18th century Italian marble top table from Shaun's shop and a second fireplace (both original to the house), the rooms work effortlessly together. KiKi helmed the kitchen renovation. What was once a back porch is now a bistro-inspired adorable kitchen right off of a large family room. The stainless drawers are actually tool chests from Lowe's and the cabinets are repurposed old shutters. A crystal chandelier moved from one of the original front rooms, a dramatic giltwood mirror found

at Dop Antiques and a thick slab of honed marble on the counter bring loads of patina and bling. But the pièce de résistance? The charming penny tile floor. Whether mixing a pair of Panton white sculptural chairs with a Provençal tablecloth or dressing an antique settee in a strong Pierre Frey graphic print, there is so much to love in this beautifully decorated home. The palette is crisp and warm, the decor layered and uncluttered; it strikes a wonderful balance of comfortable and chic. Happy clients make happy designers.

N ew Orleans and Emeril Lagasse are a match made in food heaven. The chef and restaurateur's reach can be found across the city through his products and four New Orleans restaurants. The commitment to fresh, flavorful food culminates in the group's pasta program helmed by their very own Pasta Lady. Dana Gaudé is Emeril's Restaurants' inaugural Pasta Lady. On average, she cranks out 400 pounds of homemade pasta per week, and in especially busy times, can produce upwards of 150 pounds a day. How did she get here? "It kind of just happened," Gaudé says. After graduating from Louisiana State University, Gaudé moved to New Orleans and worked for Dan Esses's Good Eggs. After moving on to another opportunity, Emeril's

Restaurants reached out and asked her if she would be interested in becoming their full time Pasta Lady, a necessary position to handle the sheer amount of pasta needed across their properties. She officially started in January 2018. "I didn't have any training, but I have a desire and a good attitude. I was always willing and happy to be there, which is partly the reason I think they thought of me." Standing at 4 feet 11 & ¾ inches, Gaudé uses a step stool while operating Stella, her red Arcobaleno pasta making machine. (It costs more than a car.) The ingredients are simple: flour and water, and liquids are added if the pasta is flavored. "I was definitely given recipes in the beginning," she explains. "But since then, I've gotten to develop my own recipes. I can now say 'Hey, I want to make this basil pasta,' or 'I want to make a lemon pepper pasta.' I make the recipes on my own, test it, and walk around the office asking anyone to test my noodles." She successfully created a gluten-free pasta, comprised from rice and corn flour, Xanthan gum (a thickening agent), and salt. "Most of the

other pastas don't take any salt. I work with such exceptional chefs that by giving them a simple base, they can make anything taste amazing. It's just giving them a good product to grow from and build a dish from." Working with talented chefs is one of the perks of the job. "Whenever they're doing their inventory, they'll tell me how much they need," she says. "It's a balance of staying a little bit ahead, but also it's as fresh as it can be. Sometimes I'm bringing in pasta that is still hot." Gaudé also delivers the pasta around town. Pasta is made in 5-pound increments at the corporate office kitchen, a much quieter environment than a restaurant kitchen. While making her batches, which typically takes 15 minutes, you can find the one-woman show listening to audiobooks or podcasts, especially anything wedding related as she's getting married in 2020. She and her fiancé met through work: He was the sous chef at NOLA Restaurant (now the executive chef at Port Orleans) and Gaudé would deliver pasta to the restaurant.

Her job description also includes training chefs on the pasta-making process. Recently, the executive chef of Emeril's Las Vegas restaurants traveled to New Orleans to learn Gaudé's ways. "It was fun to show an executive chef. It made me feel like I'm really doing this, I'm owning this, I'm running this program. They trust me to train someone who is a big deal. I really appreciated it." Gaudé says she feels blessed by the opportunity and growth she's already experienced. "I would love to see the program continue along the path we are on...I see it sticking around for a very long time. Nothing beats fresh pasta!"

W hen artists Nancy Rhett and Garland Robinette's daughter, Charley, went off to college, the couple decided it was time to downsize. They wanted to remain near Audubon Park, a place they consider to be their spiritual center, but they also wanted a smaller, low maintenance footprint and enough space to work at home. Voila! The Uptown townhouse they found met all of the couple's criteria. Then came the edit and decoration.

Long celebrated for his portrait art, which by its very nature is precise and exacting, Garland has lately been working on his wildly popular Juju Doll Series, a total departure from his previous works. Playful, imaginative, and rich in symbolism, each juju doll painting comes from the heart delivering a resounding message of joy. Part folk art, part sentimental, the funky jujus are colorful storytellers of New Orleans culture and beyond. Nancy writes the engaging messages that each doll comes with and manages their growing website. "Of all the places we have lived," says Nancy, "this little townhouse reflects us more than any other. We love every object we live with and there isn't much to distract us from our creativity." Sunshine pours into the main living room which is painted Dove White by Benjamin Moore. It features a soaring ceiling and French doors that open up to a lush private outdoor patio. "Being in nature daily is part of how we keep the creativity flowing. We fling open the doors as much as possible and eat outside every chance

we get," Nancy explains. This strategy practically doubles their living space. Favorite plants include lady palms, ligularia, and blue plumbago. "And I always have palmetto and palm leaves throughout the house," Nancy points out. "Although the house isn't old, our New Orleans garden definitely gives us a strong sense of place." Nancy is design savvy and knows how to maximize square footage without sacrificing personality. Colorful rugs are used to define separate areas for her "office," a dining spot, and family room — perfect for lounging with their teacup poodle, Jojo. An oversized coco bead chandelier that Nancy found on King Street in Charleston brings the wow factor and some of their favorite large scale artworks make stylish statements. Hanging above a charcoal gray sectional from West Elm is a folksy oil painting by New Orleans artist Nilo Lanzas. Oufette (left), the Protector of New Ideas, knows it doesn't matter which came first, the chicken or the egg. What really matters is trusting those crazy ideas. So goes the whimsical Juju Doll Series. In keeping with the Cajun phrase "good juju," each doll brings a message of optimism and joy. Amourette (right), the Protector of Loving thoughts, dances her heart out, reminding us that life is best lived with kindness. Prints on paper and canvas are available for purchase and custom jujus can be commissioned. Angeles, she designed a unique lighting fixture that works with the low ceiling (on dimmers of course) and splurged on handmade decorative tile from Stafford Tile. Another splurge for a small space is the iconic Martinique banana leaf wallpaper in the master bathroom. "It transformed our small bathroom and is another way to bring the outdoors in," Nancy explains. In the master bedroom, a pair of inherited Bombay chests and vintage porcelain lamps flank a bed loaded with pillows and collected textiles. A cream Moroccan wedding blanket that Nancy found on eBay, a pair of Indonesian dolls they purchased in Jakarta, and small pottery vases by local artist Evelyn Jordan are just some of the sentimental treasures. But the real star of the room is a series of pencil portraits on paper that Garland did of Charley each year on her birthday. The one at age six sports missing front teeth and at 12, she is wearing braces. There are 18 charming portraits in total.

When it comes to Nancy's desk, it is all about her exuberant vibe and layers of favorite things — red juju Rodriguette and blue juju Carnivette (she switches them out as the mood strikes), a custom textile nest by artist Kaki Foley, and a vibrant Boucherouite rug from Morocco. Exuding positive energy, she describes each well-loved possession. "Kaki created this meaningful nest out of colorful remnants from my favorite old clothes, old family letters, and sheet music Garland and Charley played while she was growing up. She totally captured our spirit. The rug is woven by modest Berbere women from discarded scraps repurposed into lively works of art. Can you tell I love artful upcycling?" says Nancy, all smiles. The small interior kitchen has no windows and little drama, so Nancy had to "build it in." She removed cabinets and added open shelving with mirrored backing to expand the space visually. There's so much soul and good juju in this house; you can feel it in every nook and cranny. Stacks of well-worn books, a bamboo hall tree, and French metal chair that belonged to Nancy's mother, and artful things made by friends create a beautiful visual history that is as warm as it is wonderful. "We try not to get too attached to things," says Nancy. "Everything we have tells our story. If the house was flooding, I'd grab the oil painting of Charley from the landing and Garland's purple heart and we'd be fine, just fine!"
